THURSDAY'S TIP At our Fall Retreat , we shared the most delicious guacamole . Here is the recipe the Southwest Bistro at the Hyatt Gainey Ranch shared with me. SWB Guacamole 2 avocados 1 onion diced 2 tomatoes diced 1 bunch of cilantro chopped 1/2 lime juiced Salt to taste Cut avacados in halk and remove seeds. With the skin on , cut the avocado into 1/4"cubes. Use a spoon to scoop out the avocado and place in a molcajete(mortar). Add remaining ingredients and mash with a tejolte(pestle). Enjoy! Serves 4
